Feather sexing is only useful in very specific sex linked crosses, so no, it cannot be used in Polish. Polish are indeed tricky, you'll know their gender for sure when they reach 10-12 weeks of age and begin to develop male and female specific juvenile feathering.

Those look like appenzeller spitzhaubens, that front facing Mohawk looks tell-tale. And with baby polish you CAN sex them relatively easy, if they’re hens their top “pouf” will be rounded and more toward the top, while the males will have more of an oval with a flattened front.
