Can you remove eggs after an hour of incubation and put them back a week later

So my hen has went broody, so what I'm doing is leaving 2 supermarket eggs and collecting the rest so they hatch at the same time, is it okay for like her to sit on an egg for an hour I take it away and incubate it a week later. Will it still be viable? Also do hens lay eggs in the night
 
Normally, hens do not lay at night. Eggs can safely be collected from under a broody and used later as long as the eggs haven't been brooded for more than a few hours.

That sounds like a good idea.
I assume you are collecting eggs laid by other hens, not the broody one?

A broody hen stops laying eggs. Sometimes the hen quits laying the day she goes broody, other times she lays another egg or two over the next few days and then stops laying.

Yes, that should be fine. Collecting eggs in the morning and the evening is usually good enough, when you want to save the eggs for hatching.
