Was wondering I did 10 quarts of tomatoes today. Only we were so in a hurry we forgot the salt. I read online it doesnt matter if you add salt or not. This was a absolute mistake we didnt figure it out till half way through the sealing process. I know stupid me. Anyone else have issues like this? I was too in a hurry. I know some people like salt but is it really needed? How long will my tomatoes last?

it may reduce the expiry date by a few months but will taste teh same

and as my mum taught me

you can add salt at the table but you cant remove teh salt so little is better than too much

I can lots of things without salt. It's for flavor only, it does nothing for the presereving process, the seal or the length of keeping. So your tomatoes are fine, you'll just probably want to add salt when you open them. I'd be sure to mark the lids as NAS (no added salt) or something so you remember.
