Very nice! Not something I would do but nice job with photos also.
One thing I will say about fat content within rooster or chickens in general. Feed matters!!! I processed birds for someone who feed Dumor brand and birds had absolutely no fat at all. When I opened mine up you will have a hand full of fat in some of the birds. The lady that was helping me at the table actually took a bunch of it to render it down.

Obviously your birds were eating the same feed being raised side by side but for those that want to save a buck. Poultry feed is NOT the place to do it.

I just processed by 14 month old Capon. He was LOADED with fat. I have never seen this much in my life. I feed 20% meat bird and kitchen scraps. They also free range, but the last 2 weeks I housed him separate with a 50/50 mix of scratch and 20%. He actually lost weight the last 2 weeks, so i wont be doing that anymore.
