If he has a stray piece of testicle, not connected to the 'plumbing' in there, he will be sterile. If it's all in normal working order, he's likely fertile.
Check eggs for signs of fertility!

Sometimes "mistakes" happen ... when caponizing a cockrell it is called a "slip" when both complete testicles are not fully removed ...

Open a few eggs ... check for a "bullseye" ...

I know nothing about capons, but I know neutered dogs will still hump females in heat. I have had neutered dogs get excited when being groomed, and ejaculate on the grooming table. Neutering does not always eliminate male behaviors. It is also possible that some or all of one testicle remains. I certainly would discuss the issue with whoever did the procedure. Best to assume eggs will be fertile until proven otherwise. If you want to hatch, give it a shot, if not, collect all eggs promptly, and store in a cool place.
