At 8 weeks you can change to grower, or you can buy a starter/grower they stay on the whole time.

Grower has usually around 17% protein and starter has usually 20%.

Layer- switch them to that around the POL (point of lay) which should be around 18-20 weeks.

I'm planning on changing mine to grower/finisher once they hit around 8-9 weeks. They're almost 6 weeks and I'm nearly out of starter/grower so I'll end up mixing what's left from the starter/grower into the new feed.

It should also be mentioned that a flock with a rooster should not be fed layer pellets. You can feed an all flock or flock raiser type feed from the time they hatch all the way up till they die of old age. Just be sure to supplement the hens' calcium needs with crushed oyster shell.
