One of my incubated chicken eggs is trying to hatch but a piece of the egg shell is not coming coming off when she pushes at it. I could easily get some tweezers, open the door a smidge, pull off the piece, then shut it quick... is that wise? If not, what to do?

Do you have a picture of the egg?
The chick's only pipped or is zipping?
How long ago has the chick began hatching?
It happens to me that sometimes the chick pips and the piece of shell stays attached on the whole shell and when the chick breaths it looks like it's pushing against it. In these occasions I never helped and all the chicks always hatched.

okay the chick is piping and yes, one piece of the eggis stuck and it's not coming off from where shes pushing at it

I’ve only incubated 3 batches of eggs, so I’m definitely not an expert. However, if she is only pipping then try not to worry too much (I know how hard that is!) From pipping to zipping it can take up to 20 hours. Most of mine started zipping about 10 to 12 hours after first pipping. If she is only pipping I think it is more important to keep the humidity steady rather than helping.

If it's only pipped I wouldn't help unless it passes a lot of time (like 24 hours). It happened a lot of times to me and never had problems.
Opening the incubator only for some seconds will make the humidity to low a lot and the membranes could dry and stick on the chick, so that there will be many problems in hatching.
