I've heard that with adult chickens the Hens will sleep with their head tucked behind a wing but that the roosters won't.

So . . . If I see one of my 2.5 week old chicks sleeping with it's head tucked behind its wing can I assume it's female ?

. . . of is it really too early to be an accurate indicator ?

I'd wait until your 2.5 week old is 4.5 weeks old. You'll be able to tell better by then.

My full grown rooster sleeps in the coop with his head behind his wing a lot, so I don't know how accurate an indicator that may be.

Yeah, that's just an old wives tale. Wait till they're about 8 weeks, and look for big combs. When they're older than that, look for shinier feathers in the neck.

My roosters tuck their head behind their wings too. I'd say it could be either and that's probably not a good way to tell sex.
