Hey guys something weird happened. I was making sure everything was fine in the coop as the girls went on their roosts. When suddenly, my barred rock jumped down from the roost started making strange noises, laid a rather thin egg, then pecked it open and proceeded to eat the insides with my naked neck. This is very strange considering it’s night right now. Any explanations? Thanks in advance!

Not really that strange.
Soft shell eggs are 'hard' to move because they are not hard enough for the peristalsis to move them easily, so they they emerge where and whenever.
Also not strange for birds to eat soft or thin shelled eggs.

You say it was night...like pitch dark night?
Did you have a flashlight?

I went into the coop around 7-8pm and I use the flashlight on my phone to make sure they are all there and when I shined my light in she jumped down started making some weird noises and layed that egg in front of me then she started to eat it and her sister came in to “help her” I’m just scared that she’s going to make it a habit of her eating her egg or the others eggs.

Eating thin or soft shell eggs does not usually lead to egg eating.

Tell us more about your birds.
How old are they and how long have they been laying?
...also....
-your flock size(numbers, genders),
-your coop(size in feet by feet with pics),
-and what and how exactly you are feeding,
