I have one female who is singleing out one other girl and picking at her face and has done something to her leg, and she could barely walk. I seperated her and got her healed up, but when I put her back in the group the other girl starts picking at her all over again. How do I get her to stop picking at her - short of having her for dinner?

You need to let them readjust. Put the new girl in a wire cage for a few days so they can see each other without fighting. After that, slip her in at night. You'll be good.

I have read that you can take the mean one away for a while and then when you reintroduce SHE will be the new girl and the other will be part of the flock.

Yes, isolate the mean one for a while. Then the girl that had been picked on can bond with the other hens, and the mean one will get to be the new kid.
