I keep chicken starter mash in their coop and in their favorite spot but it seems like they hardly ever eat it. I let them run around my backyard and let them forage for bugs and plants but I only see them eating their mash at night when they are about to go to bed. Oh and i NEVER see them drink any water. I have 3 bowls in my backyard that i fill up with water and it doesnt seem like they ever drink out of them. Am i doing something wrong or do chickens eat considerably less when they are allowed to roam around?

Yes, even in my yard (Which doesn't have that many bugs) mine won't eat much feed at all if left out there for the whole day. When it's time to roost though, they will gorge themselves for the night until their crops are like baseballs. As long as they eat well at night I've learned to not worry.
