Chicks vs mature chickens

What are the pros and cons of starting with chicks vs mature chickens? We are just starting out and I was hoping to keep it as simple as possible on the very beginning as I learn everything.

Started birds will give you eggs sooner. Raising them yourself you'll know how they were fed and cared for.
By the time they're adults they may be tamer if you handle them - if that's important to you.
