What kind of beans? I cook the dried red kidney. I first wash (3 cups) them and look for any rocks or messed up beans. I'm from New Orleans and never use a crock pot. Beans was always something you did here on Monday/laundry day! Ha! After washing I put them in a large 12 quart pot w. lid. I also filter my water. To start add about 10 cups of water to the 3 cups of beans. Then I add a stick of Butter(the real stuff), my meat(sausage-pre cooked and cut up or ham/ham bone) 1 med sized white onion(diced), about 3 or 4 large toes of garlic crushed, 1-2 bay leaves, sea salt and pepper to taste. If I have no fresh onion or garlic the powered w be fine(make sure its not garlic/onion salt) Generally I use both fresh and powder. Extra flavor. Turn to a medium heat, put the lid on. Stir occasionaly may need to add water as you go. As the beans cook they will swell and soften. Butter makes them creamy. When they get soft begin to mash some. The cooking is about 4 hours on med heat. To quicken process do the washing and put in water the night before and let them soak. Do not empty water add the ingrediants in the am. I also cook white rice in another pot. We eat with Fresh french bread but, you will do good w jiffy's corn bread mix. If you want a sweeter corn bread add honey and when cooked top w real butter. Thats the way we do it in New Orleans.
