A red-tailed got into an empty pen yesterday and ate a dove there until I scared him off. There were dove pieces and feathers everywhere, across three empty pens. 
We raked out the pens, bagged and threw away the dove carcass and all the feathers and pieces we could find. The hawk was eating the dove on top of a plastic milk crate. We hosed the crate off, sprayed it with disinfectant spray, then hosed it off again.
Our hens don't free range so they have minimal contact with wild birds. We don't want them to pick up mites or anything that might be left there by the dove and the hawk.
Is there anything else we need to do to before we can use those pens again?
