Cold weather coop insulation

Hi Everyone. I'm going to be a new chicken mom and am just building a coop now. I've found some plans that I like but since I'm near the upper peninsula of Michigan (you know, further north than Canada, lol) it gets cold up here. What I'm thinking of doing is putting some sheet insulation between the 2 x 4's but wonder if the birds will peck at it so I should cover it with sheathing? What are your opinions on this, please?
 
If you decide to insulate i would definitely cover the insulation with plywood or paneling so they do not have access to it. Many people do not insulate in colder climates as long as ventilation is adequate. Direct wind chill is the enemy.

I live in a climate like yours. I do not insulate, but my birds are just fine.

They're tougher than we think.
 
I will try it without insulation first then I guess. Maybe I'll use thicker lumber than the 1/4" panels my plan lists.
