I tend to go with the lazy method -- make a pile, stir it around every once in a while, keep it moist but not damp, etc. I have found that with regular turning that poultry manure mixed with straw (as in used bedding) goes really fast. It has the right ratio of nitrogen to carbon.
That said, use whatever method of composting makes the most sense to you. If you have a lot of chicken waste, I imagine a composting bin might get awkward unless it is large enough.
I've heard it is best to apply the manure when it is at least partially composted, but I have never had any problems with direct application in small amounts.
