Concerned about weight loss

Today is day 7 for my Muscovy eggs. This is my first time trying to hatch anything. From the research I've done I came up with a weight loss goal of 14% total for the 5 week incubation period, or roughly 2.8% per week. My humidity has ranged from about 33-44%. I'm attempting a somewhat "dry" incubation but I keep about 2 Tbsp. of water on a tiny dish about 1-inch round to keep the humidity from dropping into the 20s.

I have 15 eggs in the incubator. If I calculate them as a whole the loss for the first week was 2.63% which looks great. Individually, however, the numbers are all over the place and I'm not quite sure what to make of it. It may not be a big deal but my plan was the use my weight loss results to determine if I need to increase or decrease my humidity for the following week.

Part of me thinks maybe I just have a bad scale but I did use the same one both weeks so I figured even if it's off it should be off by the same amount this time. Of course at this stage even 1 gram makes a big difference. Any feedback or advice would be greatly appreciated. Thanks!
