Cooking duck?

I've always been partial to duck l'orange, there should be plenty of roasting recipes on line.

Where do you go for processing?
 
It depends on the kind of duck too. Pekings are pretty easy, but some slower growers take work.
 
There's some local people who do processing. These are the runner/swedish ducks that were hatched in the spring. I'll look up some of the recipes--THANKS!
 
My oldest son loves duck and he has asked us to raise some ducks for him. So, this thread will come in handy for us.
