I have a question regarding my coop. I live in the hot and humid area of Houston, so my coop is completely open on each end with hardware cloth (east and west facing). I really don't want to cover the end/s until absolutely necessary. How cold is too cold of a draft before I need to cover it?
 
You don't need to cover the ends completely. You just need to cover the windward side up to a few inches above the level that the birds' heads are when they sit on their roost.

As long as they're not sitting in a breeze strong enough to ruffle their feathers they'll be fine.
 
You might be able to get by with just a big awning so that rain can't blow in on them.

Breeze at perch level is a very good thing in such humid heat.

I agree that at 40F and below, especially in that super humid Houston climate, it would be good to block the wind from the perches.
