Cornish vs BB Turkey - A Taste Test

Tuesday night I smoked a 12 week Broad Breasted White Turkey and
a 7 week Cornish which were both processed and frozen last november.
I pulled them off the smoker and threw them in the fridge before leaving
for a 2 day business trip.

Tonight I sectioned the birds and heated up a 1/2 breast from each in
the oven to 160 degrees.

Well, the turkey tasted like turkey and the Cornish tasted like chicken. Duh.
The turkey had a stranger flavor and texture. The chicken was milder but
a little tougher, which surprised me.

Both were delicious and were prepared with an organic poultry rub from
Costco and smoked using blocks of hickory. They smoked for around 5
hours at 225. The turkey was maybe 10 pounds and the chicken around
5. Neither were brined.

This story does have a happy ending. Me and both dogs are very full
and have bird breath.

I'm glad you brought that up. I've noticed store bought birds made
me sleepier than my own. Probably just a coincidence.
