What would happen if I crossed an easter egger and an easter egger?
What color of egg would the chicks lay?

Generally, blue is a dominant egg color. But, with EE, you don't know what's lurking in their back ground. If your EE roo was hatched from a blue egg, and the hen he bred laid blue eggs, chances are good that the resulting pullets would lay blue, though it's not guaranteed. Green egg layers more likely have brown lurking in their gene pool. My EE roo throws the blue egg gene, but I think he has recessive for brown. His babies (produced from hens that vary in their egg colors from white to tan, brown, blue, aqua and olive) have gone on to produce cream, olive, blue, aqua, and brown.
