i sure wouldnt waste them! we have some older hens also that will be 'stewing' chickens later this fall. i dont think they'd but good for roasting and such but wow the soup and stock you would get would be heavenly

Check out Craig's List. People are always ready to buy laying hens. If they are a couple of years old, they will be pretty tough. It would be better to sell them and use the money to buy chicken at the store. You would end up with more chicken and better quality.
