Today is Day 7 of the incubation process, so I need to be candling the eggs. What do I do if some of the eggs are too dirty to candle? Can these be wiped off? Thanks in advance!

Yes, you can carefully wipe or flake poop off if you are squeamish. Do not wash the eggs, you will disturb the coating that protects them from bacteria
Edit:
Alternatively, maybe wear gloves. If the poop isn't excessive you will harm the eggs by removing it.

How dirty? Please post a picture.
Unless they are very dirty, I’d leave them be.
Also, what type of eggs are you incubating?
they are fairly dirty, they were collected when it was very rainy outside. they are a barn yard mix (barred rock rooster, Rhode Island Red, and barred rock hens, and a couple of others).
