Differences in homegrown vs incubator/hatchery birds?

This has been something that I have been thinking for quite some time. Is there differences in birds especially pertaining to cockerels/roos? It seems that the hatchery ones seem to be more aggressive than homegrown ones that I have known. Is chicks that have been raised by hens and lived in a chicken/family environment different than hatchery/incubator chicks? I know of one roo that was hatched and raised by a hen then was orphaned that is very docile, but maybe this is due to the fact he is a Australorp? It seems like the hatchery ones have turned out ornery.
 
Maybe because there's more human interaction when raised in a home setting rather than a hatchery setting?
