Do I have toms are hens??? Guessing they are 10-11 weeks old.

You really should have a pretty good idea by 12 weeks. I think I can get about 90% of mine sexed by 10 weeks, A few remain uncertain for quite a while. But you should be able to see some adult plumage materializing on the sides of the breasts somewhere between 9 and 12 weeks old (depending a little on how different the adult plumage is from the juvenile). Males of almost all breeds (except whites of course) show dark edges to these feathers, and hens show light edges. Caruncles and snoods can be deceiving at this age. By 12 to 14 weeks, feathering should be very apparent, and most of your birds can be sorted by that trait alone. By that time, behavioral difference start top show up as well as in strutting and gobbling. If your turkeys are friendly, you may be able to feel the beard developing. Many other signs too by then.

Chicken Picken, I'm not sure if they are bronze are red bourbon. I purchased them from a man who just purchased and farm with all the animals on it. He wasn't sure of their age either. Picked them up on Oct 24th he said they were 3-4 weeks old at that time. I'm thinking they are 8-9 weeks old now. I really want to know the sex of them.

They are still kind of young and their appearance can change quite a bit in the next few weeks. But I think they both look like hens. Very small snoods no big caruncle bumps and dewlaps arent very large either. And they arent Bourbon Reds they look maybe Bronze but Im not sure Im not too good with turkeys yet..
