I trimmed the spurs on some bantam roos with a pair of solid pliers. It's like cutting the nails of a really big dog. There's flesh and nerve endings in there, so be careful not to cut too far in.
I doubt the roosters hurt the hens with their spurs though, more their nails and beak as they sit on the hens. Trimming down the nails and giving the hens aprons would be more effective.

I too have multiple roo's with wonderful personalities. If I were you I'd separate all of them from the hens while they heal. The roo's will be upset and stressed when away from the ladies, though. If you can put them completely out of sight from the hens, it might help.
