Does chicken need to be aged like beef?

The water added to store bought chickens simply speeds up the resting process like brining does. Fresh birds are fine for a few days in the fridge. If you want to freeze right after butchering, you can let them rest after they thaw.
 
Thank you everyone. That's very helpful. That answered why my chicken was soo tough. We ate it about 1 hour after we dressed it.
