dried eggpant recipes?

Anybody have any good recipes that used dehydrated eggplant? I had a bumper crop this past summer, and now I need to figure out to do with it!

What a wonderful idea, I just love eggplant.

Im assuming you could make things like eggplant pamesan with dried eggplant. Just skip the frying of the eggplant (healthier anyway) and bake as usual but with some extra wet red sauce. I'd bet it would turn out great.

That is what I am going to try tonight. I had broiled the slices before drying - and am now giving them a bit of a soak.......
