It is also supposed to loosen the feathers for dry plucking. I have never tried it though. We have a large scalder to dunk the birds, and then trow 'em in a Whiz-bang chicken plucker. They come out cleaner than the chickens, although the primaries need to be removed first because they tended to jam the drum.
