Duck egg recipes?

Very interesting to read how people do things...and this is EXACTLY why I love this forum!

Starting tomorrow, I guess I will NOT be putting my eggs in the fridge and NOT washing them. GULP! Kidding....I am not worried about it once I talk to someone who does something a certain way.

Olive oil seals the shell again? Interesting.....I will keep that in mind.

Bleach water....half and half?

Having the shells be so hard gives me some comfort if I am doing something wrong by washing my eggs, though....as of tomorrow, won't do it.

the bleach wash I use is actually a powdered bleach, it comes with a little scoop and it's one scoop per gallon... for regular unscented bleach, you can pop on line and do a quick search on how much you need to add to a gallon for sterilizing things... its the same as what you'd use for cooking equipment or kitchen counters.
oil works to seal the pores in the shell.... same thing the bloom does. I've seen mineral oil recomended but olive oil works just as well, I think, and it's already in my kitchen. some of the old texts say wax can be used for longer preservation periods but I haven't tried it. I suppose I could wax them and keep them on the shelf next to my aging goat colby in the cheese cave... maybe that's the next Great Egg Experiment. Might try preserving some in water glass too... it's an even older method, a liquid silica and water solution that you put washed eggs into... eggs are reported to keep that way for a year or more. yep, that might be in the next experiment too.
