Hey Everyone! I love this website! Okay, so I have had chickens for years and now this is my second year with Ducks! I own a White & Fawn Runner, a Khaki Campbell, and a Buff Duck! I showed them for 4-H! Now, they are all females and they are laying eggs. I don't know if all are laying or just one or two for now. Anyways what are your guys thoughts on eating their eggs? Or what do you guys do with the duck eggs?? :D Thanks!

I only incubate or let Momma Hatch....I can not get past how creamy Duck eggs are...Yikes...They get fed to my Dogs, Cat or garbage...My Mom took a few for baking but never found a difference between a Chicken egg other than size..
 
My neighbors love them! I just don't eat eggs at all. I just wanted my ducks for fun, so I give them away. People say they're best for baking cakes & such
 
Our Jumbo Pekin girl has been laying for two weeks now and we have eaten her eggs... they are HUGE and the white is very thick, but once cooked, I honestly can't tell any difference in taste or texture compared to run-of-the-mill grocery store chicken eggs.
 
We only eat duck eggs at our house. They are a little bigger, have a bigger yolk, and the white is thicker and contains more protein. If you fry the eggs you must use a lower temperature and cook them more slowly or they get rubbery. I give my extras away at the school I work at and I have a following who love them. Note: I have Khaki Campbells with baby pools, no pond. I have seen a few people on this sight complain that duck eggs taste fishy. I wonder if that happens if they live on a pond and eat lots of snails?!
 
Gluten free baking. My uncle has celiac disease and his wife makes German pancakes with his flour and duck eggs. They come out fluffier then the normal flour and chicken egg batch.
 
Also if you have a recipe that is consistently on the dry side. Duck eggs make a difference. If your baking is already moist you wouldn't notice a difference.
