I just got a Breadman bread machine. The loaves without eggs have been wonderful. The loaves with eggs (not so - didn't raise quite right). I use duck eggs. I know there are a number of factors that can affect it, but was wondering if the quantity of eggs could be an issue. I use one for one duck eggs for chicken eggs. They are a little big than chicken eggs, but not drastically. Just thought I would see if someone else had some experience with this. Inclined to believe it may be more temp of liquids or yeast, but seemingly these have been fine. (yeast worked fine in other recipes and temp was okay). Anyone do anything differently with recipes with duck eggs in them?
