This may be a dumb question but what color eggs should they be laying? I have 3 easter eggers and all of the eggs to date have been green. Will they ever lay a blue one once in awhile?

The color for the most part will not change. So if your EEs are laying green, you are a lucky person who has green eggs!
Whatever egg colour your hens start laying is the colour they will continue to lay. The colour might fade as the egg laying season progresses as well as with age. But the colour will not change from blue to green or any other colour.
