But I haven't heard a crow and don't see spurs and saddle and tail feathers seem to have finished growing. I've had lots of chickens in the past and have never been this mistaken. Are these all pullets?

EE can be tricky! IMO anyway.

I agree that all 3 are lovely pullets. EEs can certainly throw you for a loop especially when they're in their teenbird phase. A few of mine certainly had me a bit suspicious. With them, ignore long tail as many go through a phase where they have long and often roo-like tails. Instead look for early pinking up, pointy hackle or saddle feather - again, pointy feather, not merely long feathers - and gender specific color patterns. The pattern of the one in your second photo is female specific. A male of a similar coloration would have a less even pattern most likely with red patches mixed in
