Eating eggs after they have been sat on for a couple - to few days? don't want to eat embryo

When is too long to still eat eggs when the hen has been sitting on them the whole time? I don't want to crack an egg to eat, to see a partially formed embryo. That would turn me off from eating another egg forever, and, I just started eating my own eggs, so, I don't want that to happen,

You can candle them to see if there is an embryo, or just toss them, especially if it's been longer than a couple days. I assume you have a male...
