EE or OE?

The term Easter Egger is for any bird that will lay a blue/green colored egg (though some hatcheries will also include pink too). It's not a breed and so has no breed standards. They can basically look like anything. The reason most EEs sold by hatcheries and feed stores have a similar look with beards/muffs is because they are related to Ameraucanas.

You can also make your own EEs by mixing EEs or mixing breeds that have the blue egg gene with other breeds (brown egg layers to get green eggs, white egg layers to get blue). Ameraucanas are one of the most common for mixing but if you are getting birds with crests, they are likely from Crested Cream Legbars. I have a few in my flock from my CCL rooster. Olive Eggers would be the same except they are from breeds that lay the dark chocolate brown eggs. My OE is a CCL/Marans mix.

If the bird lays a dark green egg you could call it an EE or an OE. If it lays a blue or light green egg it would be an EE but not an OE. The males would be a bit more difficult unless you know the breeds that went into the mix but you should be safe calling them EE.
