Egg-Eating Lady

I have one hen who has been eating eggs here and there for about a month. I adjusted her feed to make sure she's getting what she needs and she stopped, but now she is just putting like a peck mark into each egg. Instead of eating them, now she is just ruining them. I purchased roll out nesting boxes for them and plan to install them tomorrow- but should I still be concerned she isn't getting enough protein? I've heard some people argue egg eating is never bad behavior but a deficiency, but now it seems she's just messing around Any ideas?

It can become a habit even after diet is adjusted.

Might take some time to get them to use them.
Some advise putting bedding in the nests at first then slowing removing it to get the roll going. Might stick some fake eggs in them too, and gather frequently.
