The top photo shows the chalazae. There is one attached on either end of the yolk to anchor it to the membrane that lines the shell. It's like a bungee cord. When it breaks, it contracts, like an elastic.
The bottom photo shows what I believe is a calcium deposit in the egg. An egg can also have a blood spot or a meat spot. All are normal inclusions, and are never seen in store bought eggs b/c those eggs are candled with high power equipment. Any abnormal eggs (either inside, or with odd looking shells) are removed, and sold to be dehydrated and used in mixes and such.
