egg laying breed rooster......table fare????

Can anyone tell me if RI red rooster or Auricana roosters are worth butchering for dinner or are they too boney,meatless?

We just put 2 RIRs in the freezer last week. We waited until we had an incubator full of fertile eggs and dispatched the roos. They were 11 months old, free ranged and I will probably have to cook their carcasses under pressure or a slow roast. Each weighed out around 5 lbs dressed.
If anything: make dumplings!

We stuck one in the crock pot about a month ago. He was almost 10 months old. Plan to do that with the other 2 once I get enough chicks out of them.
