You would have to provide supplemental light during the winter. Some people have no problems with that, but some do believe that it's healthier for the hens to take their winter break.
Add lighting to come on in the morning. They need about 14 hours of light in a day, 16 hours for maximum production. You have to figure out how much natural light they are getting then I find it easiest to put the light on a timer to add the extra. Personally I only give mine 14 hours. If I normally get 12 during the summer they might slack off to 9 or 10. I'm not exactly worried about full production.
Something else I'll add. I wouldn't do this unless you have production breed birds IE birds bred to lay. I'm sure it can and has been done to regular chicken breeds but IMHO their bodies aint set up for it and need the natural break in the winter. If you do do it make sure they have a good diet and plenty of oyster shell. Daily laying is hard on a chickens body year round. If you are asking them for 100% make sure you care for them 110%.
Once again that is just my opinion. Some people don't agree doing it to any bird.
