Okey dokey then, I did a search on here and came up with . . . NOTHING!
Everybody knows mom's version with mayo/mustard/salt & pepper.
So who makes it DIFFERENT??? Let's hear/share some really cool (dare we say healthy) twists on egg salad.
I'll start it off with one of mine:
Katy's Indian Eggs
Eggs - boiled & chopped
Mayo - less than usual
Curry Powder - to taste
Fresh Cilantro - chopped, not to much
Champagne grapes - or if you can't find those use sweet purple grapes cut into quarters
Mix together and chill for at least an hour. Serve on bread with fresh lettuce and sliced white onion.
