Egg salad recipes needed...

I would like to get a few different recipes for egg salad sandwiches. Thanks much!

Yikes, I don't have a recipe, it is all to taste, but this is what I do:

Hard boil a dozen eggs (duck eggs work great here!!). Peel and chop. Add a scoop or 2 of mayo, a little spoon of dijon mustard, a littler spoon of horseradish and a couple of dashes of Worcesteshire sauce, salt & pepper.

One of these days I'm going to try it with homemade mayo, double

eggs - boiled / diced
small amount of mayo
cilantro - chopped
white onion - finely diced
champagne grapes - if you don't have these avail take purple grapes, quarter and seed
curry powder

most important let this sit at least an hour

I don't really have a recipe either, but here's one of our favorites--

boiled & diced eggs
chopped celery
diced tomato
chopped small sour or dill pickle (sour gives it a 'bite')
dash of creole seasoning, dijon mustard, mayo & worchestershire sauce to taste

Sort of like tuna salad except without the tuna.

Here's another of my "grownup" egg salads

boiled/diced eggs
mayo (very scant amount)

diced nonsense mushrooms and shallots - very lightly sauteed in butter

small pieces of diced salami

mix and season with Janes crazy mixed up salt.

I chop up the eggs, add mayo to texture desired. Then sprinkle in some celery seed. Sometimes I will add a couple of spoons of pickle relish. For my "heat loving friends" a couple dashes of Tobasco sauce mixed in will satisfy them. Easy Peasy!!

'Greek Egg Salad'

chopped hard-cooked eggs
olive oil/mayo
diced red onion
Feta cheese crumbles
chopped kalamata and black olives
freshly ground pepper

Best after several hours in refrig. to give the flavors a chance to blend.

Especially good on pita bread --

HI all Iam looking for a egg salad recipe someone made at a dinner and I cant find it.. It was a very thick egg salad and the eggs where cut long thin strips and it had some kind of shredded white cheese..it is white in color and very creamy... We ate it on doritos with a dash of hot sauce...if any one know this recipe please help me out with it.. I so so enjoyed it.. Thank you very much...
