Based on what I've read can I assume that:

Even if I have had an egg sit while I am at work for 8 hours, I can rotate my eggs as frequently as I want thereafter, as long as the next long duration of sitting without rotation is on the opposite side?

Thanks for your help! I'm building an incubator and don't want to build an auto turner when I will not be hatching often at all.

Yes, if you make sure you rotate an odd number this will prevent the egg from sitting on the same side for those longer gaps between turning.

That should work fine! The last week, rotating is way less critical, if even necessary as the chick is sizeable and mobile.

As long as it is 3 or 5 times daily, it can be 10, 8, and 6 hours apart or whatever, don’t rush home over lunch or get up at midnight, they’ll be fine! But according to some study I read you can increase hatch rates by 1% if you turn 87 times a day, personally I don’t think it is worth it but anything for science!
