Okay I'm going to start from the begining, don't worry not that long. I went to the grocery store today and could not bring myself to buy hamburger for $4/lb. I'm used to paying $2.30/lb for 80/20. So I have alllllllll these eggs (my girls have been busy) and we aren't big egg eaters, we are getting better about eating eggs as a defense though! lol
I had all the ingredients for taco salad for supper tonight except for the ground meat. I like to experiment in the kitchen a lot, so I attempted like an ancient alchemist to turn eggs into ground beef. He loved it and still has no idea he ate eggs!!!!!
So this is what I did, took 3 eggs beat them w/ mexican seasoning (chili powder, garlic powder, red pepper, cumin) then took 1/3 can of black beans and smooshed them beat them in w/ the eggs. Sauted onions in a skillet, then added beaten egg mixture, made basically scrambled eggs cooked thoroughly and added 1/3 can of the whole beans when egg mixture was good and cooked.
It came out dark and crumbly like ground meat. Serving it w/ taco salad disquised that the eggs were a diff texture (slightly softer then ground meat). Definately worth playing w/ the ingredient amounts to see how far I can take it.
That got me to wondering, does anyone else have any magic recipes that change eggs into something else?
