eggshell question

what does it mean when there's no clear film under the shell? when you boil an egg and you're peeling it, you can peel the shell off without getting chunks of the white. But when you can't, like the shell is stuck to the egg, what does this mean in terms of diet?
 
It means you are eating a fresh egg. Fresh home grown eggs are harder to peel than store bought eggs. If you let the egg sit in the fridge a few days and then boil it, it should be easier to peel. (I hope this is what you were talking about, if not then I'll feel

oh ok. i've been eating them the same day or the day after harvesting.
 
There are some excellent posts from a few years back about boiling fresh eggs.
Lots of salt and vinegar in the pot helps. I just leave them on the counter for a week.
Do a search for boiling fresh eggs and see what comes up.
 
That's right, it just deals with the age of the egg. Older eggs are better for boiling. Fresh eggs are better for poaching.
 
Everybody is correct here. An eggshell isn't completely impermeable. Over time, water will evaporate from the inside of the egg, causing the membrane to pull away from the shell making older eggs easier to peel when boiled.
