Favorite Homestead Books?

I’d like to learn more about homesteading. Primarily thinking about animals more than gardening (but not excluding a garden). Chickens obviously. But I’ve considered a couple of pigs, maybe hair sheep (no shearing), maybe a beef cow. I’m pretty open now and just in the want-to-learn-more phase.

Do any of you have favorite books on the topic?
 
While not exactly a homesteading book, the foxfire book series is a collection of essays put together by students in North Carolina. There assignment was to go into the Appalachian mountains and gather knowledge from the old timers. They put the essays together and released several books. The books have all kinds of stories told by the mountain elders ranging from old wives tales and home remedies to instruction on how to grow and build everything a person needs to survive in the mountains.
