you'll want to have a good fat layer on the one you want to smoke and brine it real good as they dry faster then the butterballs and that would be a same!!

They are pretty easy to cook lean. Just need more time and alot of mopping during the cooking part. Add an extra 2 hours or so on to a butterball and lower the temps by 100 or so and good to go. I like to brine them, there is a few good ones on our website under recipes and man are they to die for.

Yes about 100lbs per free ranged bird or so. Hens eat less and toms eat more and waste. If you confine them they will eat less for gain, but then you might as well get the BB types.

Is there any role for a cooking bag or foil prior to final crisping of the skin to encourage moisture retention?

I would assume that convection would be a no no.

Darn now I am getting really hungry.LOL
