I just aquired a roo that is in with my hens, I have never had to worry about fertile eggs, so my question is, is a fertile egg edible??? And also how long after an egg is laid can you candle it and see if it fertile?

I am new so this might be a stupid question.....

Fertile eggs are perfectly edible. I eat them all the time.

Some people don't like it cause they know it's fertile, but thats too bad for them!
Either you have a broody or your incubating, you can candle and actually tell something is growing in there at day 7 sometimes if you have brown or colored eggs it's harder to tell and you have to wait till day 10 or 12. Theres some pretty useful stuff in this section if you have the time to look through it.
