Well, if you crack it open and look at the blastoderm / germinal disk ( the small white spot on the yolk ) and see if it has an expanding ring around it like a bullseye.... that is fertile.
Now, if you dont want to break the egg to find out, you can incubate it for 3 days and see if it starts to develop blood vessels that you would be able to see by candling.
Of course if you have blue, green, or dark brown eggs, it is harder to see thru the eggs when candling so you may have to wait a day or so longer for more veins to be visible.
