I have 21 RIR hens and 3 roos. A gentleman that has a 250 egg incubater (sp) wants me to save eggs for 4 days till he can pick them up, which is ok. My question is if he doesn't come get the eggs or changes his mind would those eggs be ok to eat or sell. I usually refrigerate them same day collected. These I would not.

as long as there kept cool, under 60 degrees they will be fine to incubate or eat
 
55 degrees is ideal for holding eggs that you plan to incubate, and at that temp, it will be fine to eat them if he changes his mind after three days. 45 to 35 degrees is the ideal for storing eggs you plan to eat, so if he does change his mind, I would get them into a cooler fridge soon. Sounds like fun!
